- 6 cups raw potatoes, diced
- 1 large onion, minced
- 1 cup celery, minced
- 1⁄4 cup fresh parsley
- 1⁄4 cup butter, melted
- 1 1⁄2 teaspoons salt
- 1⁄8 teaspoon pepper
- 1 teaspoon poultry seasoning
directions
- Cook potatoes in small amount of boiling water, 5 minutes and drain.
- Add remaining ingredients. Toss to mix well.
- Put in buttered dish (11 x 9. or there abouts).
- Cover (put in frig to cook next day. bring to room temperature). OR.
- Bake 350 for 30 minute.
- Uncover 10 minute.
- Fluff with fork.

These are pretty quick and easy to make. The chopping potatoes onions and celery is the only thing that takes any time. Everyone enjoyed these at our house. We all gave it either a 4 or 5 star rating. (The 4 stars rating only won out by a single vote) I can't wait to try them out as home-fries tomorrow! Thanks Tessa 22!
