  • Mix tomatoes, herbs and liquids in a bowl.
  • Season with salt and pepper.
  • (Can be prepared 2 hours ahead. Hold at room temperature.) Spoon tomato mix onto toast and serve.

  2. Had some neighbors over for cocktails and I served this appetizer. Everyone loved them. I made the tomato mixture early in the day. Once my guests arrived, all I had to do was top the toasted bread with it. Easy and very tasty and I wouldn't change a thing. Another winner, CountryLady.
     
  3. Made the tomato mixture ahead and let the flavors marry. I loved the addition of Balsamic vinegar and lemon to this. I usually just make mine with olive oil, garlic and basil. Had to leave out the oregano; DH does not like it. Thanks for posting, CL - will definitely make this again.
     
  4. Delicious brushetta! I followed your directions, except for adding a little diced Mozzarella cheese and some black pepper. We will definitely be making this again!

In the words of Tracy Byrd, "I'm from the country & I like it that way"!! On May 1, 2008 my husband and I started a new adventure. We'll be living in a 37 foot RV while our new home is under construction. Its out in the country on a dead end dirt road with lots of trees. For the next 4 months or so, most meals will be cooked on the BBQ and life will be full of challenges! We love spending quality time with our friends & family - especially the grandkids!! The photo is 4 generations - my 84 year old mother, myself, my daughter & my youngest granddaughter - taken at the end of 2006. I've participated in many contests & events here on Zaar but this is the first banner that I've posted.
