  1. Roll out puff pastry to a 12 inch square. Cut into 16 (3 inch) circles. You will need to re-roll the scraps to get enough circles.
  2. In a bowl, combine ricotta, Parmesan, egg, chives, thyme and nutmeg. Mix well.
  3. Place parchment over the top of the puff pastry and top with a second baking sheet. Bake 5 minutes.
  4. Spoon cheese mixture in center of each round, dividing equally.
  5. Bake about 20 minutes, until edges of pastry are puffed and edges are slightly browned.
