Herb Roasted Chicken & Vegetables

Quick prep, healthy meal for a family of 4. I like to make recipes like this one after the kids go to bed, refrigerate, and serve the next day after I pick up the kids and get home from work. 6 pm mealtime is easier to accomplish!

My husband made this recipe and it turned out great! He used cream of chicken soup instead of mushroom and he added two cans instead of one, making the meal creamier. He also added some zucchini and red peppers to the dish. It was served over rice. Definitely would have this again.

Ingredients Nutrition


  1. Mix the first 5 ingredients together in 9x13 pan.
  2. Lay chicken on top.
  3. Sprinkle chicken with last two ingredients.
  4. Bake at 400 degrees for 50 minutes or until chicken is done.
  5. Stir and serve (or cover and refrigerate).
