This is a great recipe for any cut of roast. Very flavorful

Directions

  1. Mix herbs and seasonings together.
  2. Rub seasoning mixture completely over roast.
  3. Wrap roast in foil, sealing ends and edges, but leave room for steam.
  4. For more flavor, let roast stand for 30 - 60 minutes.
  5. To cook, leave roast in foil. Place in a roasting pan and cook at 325 degrees for 20-25 minutes per pound or until desired level of doneness.
  6. Let the roast stand for 5 minutes. Remove from foil, saving drippings for gravy.
  7. Slice and serve.

My DH said he was tired of crockpot roast, so I thought I would try this one, and even the 23 month old said, mmmm it's good, more please! I'm making it again tonight, I'll try to remember to take a pic to post!

This was to salty for me. I used a 6 lbs roast. Also to many parsley flakes, kind of over powered the roast. It was done in 1 hour and 15 min. I will try again makeing the changes above.
