I used small yukon potatoes and cut into wedges. I elected to bake in a nuwave oven and they turned out delightfully crispy, very flavorful, and a hit with all diners. Made for the Lorac cookathon.

Tasty taters! I didn't have herbes de provence so I just added spices from the cabinet. I also used russet instead of red potatoes and turned out fine. Made for Lorac Cookathon 2014.

mmm mmmm good! we loved these potatoes, the combination of dejon mustard, garlic and the herbs was lovely. I cut the oil to less than half, they turned out great. Thanks for posting, I will be making these again.
This is an excellent recipe and very versatile. I increased the amount of Dijon and decreased the amount of oil. I sprayed the potatoes (before and once during cooking)with Pam to reduce the fat. I didn't have herbes but sprinkled them with a combination of spices we like. Awesome.
excellent side dish and accompanied by Green beans with Roasted Chestnuts in a Dijon Sauce and Sacallops with Coriander Butter Sauce - terrific.
