Herb Crusted Flank Steak - South Beach

A South Beach Diet recipe that my sister passed on to me.

Ingredients Nutrition

  • 1 lb flank steak, visible fat removed
  • 14 teaspoon salt
  • 12 teaspoon tarragon
  • 12 teaspoon garlic, minced
  • 14 teaspoon pepper, freshly ground
  • 2 tablespoons Dijon mustard
  • 14 cup whole wheat bread crumbs
  • 1 tablespoon fresh parsley, chopped

Directions

  1. Preheat broiler and pan.
  2. Combine the salt, tarragon, garlic, pepper, and Dijon mustard in a small bowl.
  3. Spread half this mixture onto one side of the meat.
  4. Broil mustard side up, about 4 inches from the heat for 4 minutes.
  5. Turn the meat over, spread the remaining mixture, and broil for an additional 3 minutes.
  6. Combine bread crumbs and parsley, pat evenly on meat.
  7. Broil 1 minute more.
  8. Let stand 5 minutes.
  9. Slice steak thin diagonally across the grain.

This was pretty good. I don't have a lot of luck in cooking steaks, but this was very easy. My brother & sister did not like the breadcrumbs and just scraped them off. I thought it was good with them. Thanks!
