Herb-Broiled Tomatoes

A favorite way to serve tomatoes. Nice side dish. From Cooking Light, 1988

Ingredients Nutrition


  1. Combine first 4 ingredients in a small bowl, add margarine, stirring well. Set aside.
  2. Cut tomatoes in half crosswise.
  3. Place tomato halves, cut side up on rack of broiler pan.
  4. Broil 7 inches from heat for 3 minutes.
  5. Sprinkle tomatoes with cereal mixture, broil 1 additional minute or until lightly browned.
  6. Place on a serving platter.
  7. Garnish with fresh parsley, if desired.

Hi, made this recipe tonight as a side veg. with dinner, simple to make, we enjoyed. Really enjoy your site, just starting to eat and live a healthier life style and your recipes have been great. they are recipes that I can live with and enjoy because its not easy changing your life style in your mid 50's. THis is pretty good and very simple to make. I mixed some low fat shreded mozarella in with teh shreded wheat at the end. It was good, but I think my tomatos are too ripe so they are kinda of watery. I also lined the broiler pan with aluminum foil: clean up was a breeze. thanks
