Helen's Christmas Cranberry Delight

"This recipe is more than 65 years old and what a delight at the holidays! It is a side dish that is incredible with Thanksgiving, Christmas and New Year's celebrations. This will take you back to those warm family gatherings at grandma's house on a cold and snowy winter's day. My mother always made this for me and every time my wife makes it for me it brings back loving memories of her."

  • Combine cranberries and pineapple in a bowl and toss lightly.
  • Mix Jello with 1 cup of hot water, stir until dissolved.
  • Add the Port wine and the fruit mixture and pour into a 9X13 inch glass pan and refrigerate until set firmly (about 3 hours).
  • Let the cream cheese soften at room temperature while waiting on the Jello to firm. Blend with 1 cup of sour cream.
  • Spread the softened cream cheese evenly onto the Jello mixture and top with chopped walnuts.
  • For best results chill about 1 hour before serving.
  • Will keep under plastic wrap about 3 days.
  • Enjoy and Merry Christmas!
