This was a challenge. A challenge not to eat my husbands serving before he got home. I could easily just eat this all day. Nothing else, just tomato, mozzarella, oil and vinegar and basil. This showcases summer at it's best, and in the winter reminds you what summer is all about. Easy as a pickle to put together, probably less then 5 minutes. I have also made this for a few years! It is awesome. I usually slice the tomatos thinner. I have even chopped the tomatos and shredded the mozzarella and I usually add a little garlic. The key is using a great tomato!
I've made this salad for years, it is my favorite way to indulge myself in the summer. I sometimes add just a little fresh pressed garlic too, not too much 'cause I don't like to overpower the other flavors. It is heaven on a fork
