Heirloom Apple Pie

"So I've decided to give it up. I'm sharing the recipe. For years I've been fiercely protecting the recipe with my life, only to learn that other members of my family have already shared it with non-family members... It's been in my family for several generations, with everyone adding their own little touches, making it what it is now. I have a hard time trying to eat any other apple pie. It's so simple and so good."

  • Mix apples, white and brown sugar, flour and cinnamon all together in a large bowl and pour into pie crust in pan.
  • Dot with butter and cover with top crust, sealing and fluting edges.
  • Slit a few holes in top crust.
  • Brush cream lightly on top crust, all over, and sprinkle with sugar.
  • Bake at 450 for 15 minutes.
  • Reduce heat to 350 and bake another 50-55 minutes, until bubbly and apples are soft.
  • Savor every bite.

Culinary school drop-out (happy cook)! My name is Meg, as my public name might suggest, and I'm 20 years old. So far, I've been a cook my whole life, at home and in restaurants, working as a Baker's Assistant right now. I was raised in a commercial bakery and general store as well run by my aunt and mom. I'm engaged to an amazing guy, who I met in high school in a restaurant prep course. We both went to college for Culinary Arts/Chef Training, but neither found the program very satisfying. As it stands, we're both happiest cooking, so long as it's not in a kitchen lab. I've been nosing around 'Zaar since I was about 13 or 14, and it's been a huge source of learning for me, back when I didn't even know what a roux was, haha.
