Hedgiehog's Chicken Tikka Masala

"I've loved this dish for years but only eat it when I go out for Indian so I decided to try to make it at home. Don't let the long list of ingredients put you off. It's full of flavour and is an integral part of an Indian dinner party. I hope you enjoy it as much as I do."

  • Rinse the chicken, pat dry and cut into bite size pieces.
  • Begin making the marinade:

  • Combine all marinade ingredients and coat the chicken with it. Leave in refrigerator for several hours or preferably overnight.
  • Cook the chicken either on a grill or under broiler.
  • For the sauce:

  • On medium heat , cook the onions in melted ghee or butter.
  • After a few minutes, add in garlic and chilies.
  • Add in all the spices and brown sugar.
  • Stir in chicken and tomato sauce.
  • Simmer for 10 minutes.
  • Add in the cream and combine.
  • Garnish with chopped cilantro.
