- Melt the butter.
- Pour it into the milk, and stir.
- Use in place of one cup of heavy cream.
- Tip: If you use low-fat milk, add a tablespoon of flour to the mixture to thicken.

hi can i use evaporated milk?
I don't normally stock heavy cream so this work around is awesome for baking...as long as you DON'T have to whip the cream. Conversely, I always have half and half for my coffee so I have found using this same recipe with half and half instead of milk (I think at least 1% is preferable in that case) works a little bit better since you get closer to the 46+% milk fat in heavy cream. I use this substitute in alfredo sauce all the time since fettuccine alfredo is usually not a planned dinner in my house, think better tasting mac and cheese thats quick and easy. Please Note: This recipe WILL NOT WHIP what-so-ever! It is a substitute for heavy cream in recipe...not to make whipped dishes (just in case you didn't see that in the name of the recipe or at the beginning of my review). Notwithstanding, I have found light cream works OK for whipped dishes but it usually causes the dishes to lack the full flavor and texture that comes with heavy cream.
