Here is what he stated about the recipe: "The best and most unusual of all the Original Pancake House's pancakes is its apple pancake. It's baked, not griddled, and comes out about an inch thick . It's bubbling with superheated apples, releasing a marvelous cinnamon aroma. The recipe is a secret, but knowing well what the final product is like I've come up with a close approximation."
