Heavenly Tuna Burgers

"I found this recipe in Ann Byrn's "The Dinner Doctor. She said her mother made these when she was little and they actually resemble tuna melts. Byrn said these were heavenly when she was a girl, and they still are."

  • Preheat oven to 350 degrees F. Line a baking sheet with foil.
  • Combine tuna with the olives, onion, pepper and cheese. Add only enough mayonnaise to hold the mixture together.
  • Form patties and bake these on a foil-lined baking sheet in pre-heated oven until heated through, about 8-10 minutes.
  • Serve on toasted English muffins with a slice of ripe tomato.
