Heavenly Sweet Potato Casserole from Ruth's Chris Steak House

Almost more of a dessert, this warm, sweet, creamy casserole with a crunchy topping is Southern to the core! It's sheer decadence, but allowable once a year: in any case, it just won't last. It's easy to make, which scores double points for holiday cooking. The recipe comes from the popular Ruth's Chris Steakhouse chain, I found it on nola.com

Ingredients:

Serves: 10

Yield: 10.0 1/2 cup ...

• 1 cup brown sugar
• 1⁄3; cup flour
• 1 cup nuts , chopped (pecans preferred)
• ¼ cup butter , melted

For the Sweet Potato Mix

• 3 cups sweet potatoes , mashed
• 1 cup sugar
• ½ teaspoon salt
• 1 teaspoon vanilla
• 2 eggs , well-beaten
• ½ cup butter , melted

Directions:

1. Preheat oven to 350 degrees F.
2. Combine brown sugar, flour, nuts and butter in mixing bowl. Set aside.
3. Combine sweet potatoes, sugar, salt, vanilla, eggs and butter in a mixing bowl in the order listed. Mix thoroughly. Pour mixture into buttered baking dish. Sprinkle the surface of the sweet potato mixture evenly with the crust mixture.
4. Bake for 30 minutes. Allow to set at least 30 minutes before serving.
