This is great to put together when you're looking for something hearty to make but don't have any protein around. To make it truly vegetarian, you could use vegetable broth.
- In saucepan, combine all ingredients. Bring to a boil, then reduce heat.
- Simmer, covered, 20 minutes.
I used low-sodium beef broth, 1 small onion, 1/2 cup of frozen corn instead of lima beans cause I don't like it. This is a great healthy soup. But it was a bit sweet. Maybe too much tomato sauce. Thanks jackie :) Made for Holiday tag
