I love this recipe! I had it as a side dish the other night with a pork roast. I used the leftovers for lunch and added some butternut squash. Yum!
I added sausage and used chicken stock. The first bite was startling but by the third bite we liked it. I think I will use curry instead of cinnamon next time or cinnamon with a little hot red pepper for balance because I agree, it was a bit sweet. Very creative way to use this healthy grain. Thanks for sharing!
this was good. i added trader joes chicken apple sausage to make it a meal. the dish was pretty sweet.. next time i will add more curry powder and maybe even a little cayenne pepper.
I'm quite behind on reviewing this for 1-2-3. I'm so glad I finally made it though. We loved the flavor with the cinnamon. The only thing that I disliked was that the ratio of 1 C quinoa to 2 C broth made it too wet. I simmered it over 30 minutes and it never absorbed all the way. I might try adding some more quinoa or using brown rice (so my DD will eat it-she hates quinoa). My other 2 kids kept asking for more! We added some chicken sausage to it for a main dish and it turned out great. I did saute the apples separately, but they turned into applesauce, so I'll add them in with the rice next time.
A good dish, but I did prefer it cold to hot. I left out the oil and cooked the veggies in broth. I also added the apples at the end of cooking to the quinoa and left them steam with the heat to the pan off. Thanks for the recipe.
Quinoa is a whole new grain for me. Both DH and I really enjoyed this delicious side. It was served with Low Cal Sole. I have half the recipe left and will probably add some curry powder. As is, the recipe is wonderful. The flavors blend beautifully.
This was my first time cooking with quinoa. It was really good! I think I would have preferred it as more of a dessert though. This recipe seems to have a Moroccan influence. My husband tried some cold and it reminded him of figs...hmm. I used the cinnamon but curry powder probably would have worked really well in this. Made for Photo Tag.
