Ready, Set, Cook! Special Edition Contest Entry: I created this recipe for my daughter as she loves a hearty breakfast. This dish can be served for dinner or breakfast with scrammbled eggs.

  1. Remove the sausage from its casing and crumble into a pan. Brown the meat and add the onions, red bell peppers, fennel and garlic. Saute this together for 5 minutes and then add potatoes to the pan along with the cumin. Cook mixture for another 5 minutes on a low flame. Add the black beans, corn and spinach and mix well. Place the mixture in a casserole dish and sprinkle the bread crumbs on top. Bake @ 350 degrees for 30 minutes. Serve it with scrabble eggs if desired.
