Hearty Date Bran Muffins

These moist and hearty muffins start any day off right. Dress them up with a spoonful of your favorite fruit jam or enjoy them "au natural". The prep time does not include the time it takes to cool the date mixture.

  1. FILLING:.
  2. Combine all ingredients in saucepan, simmer 5 minutes.
  3. Set aside to cool.
  4. BATTER:.
  5. Combine 1st four dry ingredients in large mixing bowl.
  6. Beat remaining ingredients together to blend Add with date mixture to dry ingredients.
  7. Mix well.
  8. Spoon into greased muffin tins.
  9. Bake at 375*F (190*C) for 20-25 minutes, or until top springs back when lightly touched.

This is Jim's wife. I made these and did a couple changes. I used prunes instead of dates. I used yogurt instead of buttermilk. I needed to bake them about 31 min. before they were done. The batter was a little too thick, I guess because of the yogurt. I will make next time using the buttermilk.
