quick, easy, delicious and low fat! perfect
Lovely recipe I added some red pepper and put a dollop of cottage cheese in the soup bowl. Love the cilantro. I didn't puree half of the beans . Thanks Sue for a lovely lunch
Quick, easy and nicely seasoned. This is one of those recipes that I can make anytime cecause I always have the ongredients. I made this just as written, using the chopped cilantro garnish. You can't go wrong with this easy and healthy soup. Thanx!
My mother and I made this last night (I'm sixteen- still an apprentice chef!) with a few alterations, to make enough for our family of six. It was DELICIOUS, had an authentic Mexican taste, and goes wellwith rice. TIP: putting tortilla chips in this soup makes it IRRESISTABLE- you may have to ration it! :)
I fixed this for supper tonight and it was delicious. Having all the ingredients on hand made it easy to make. :) 5 stars for sure Sue L.
I've cooked this a few thousand times now. It's a hit with my finicky nine year old, and it's so easy to do in the slow cooker, too. I like doing it that way, because I used dried beans, so I soak them and cook them in the same pot. Although I tend to vary the recipe according to what I have on hand, my favorite thing to do is to add lime juice and top with a tablespoon of onions in addition to the cilantro. I sometimes serve it with Mexican cornbread or homemade white bread. Very seldom are there leftovers no matter how big a batch I make!!
thought this was wonderful! i think i'll add a bit of white wine next time, but i like that this is very simple and you can make changes as you wish. it makes a small batch, so i doubled it. YUM!
The flavor and seasonings were perfect. The touch of fresh cilantro at the end is just right. It's very good. The only change I will make next time is to use less onion and more black beans for a thicker bean soup. I did dress it with a small dollop of sour cream in each bowl - YUMMY!
