Heart Healthy Harvest Pancakes

"This is what I threw together for breakfast this morning and my kids and husband loved them. If you have picky eaters just don't tell them there is squash, they will never know! Canned pumpkin puree can be substituted for the squash. I made them about 3-4 inches across and came up with 16 pancakes."

  • Mix all ingredients together in a medium bowl.
  • Preheat skillet to med-high heat. As long as your skillet is preheated properly you should not need to add any fat to the pan.
  • Using a small ladle, ladle mix into skillet and let cook 4-5 minutes per side, until golden brown.
  • Enjoy topped with maple syrup, or for a healthier version, you can top with warmed cinnamon applesauce.

  1. These pancakes are a great alternative for the "original" ones. They taste better and aren't as heavy as the ones I usually make. The majority of the people that ate my pancakes didn't know with what sort of ingredients I used.I got a lot of compliments with my food. Thank you for sharing this recipe with us!
     
  2. Great! I made it with raw yellow squash (pureed with half of the milk that the recipe calls for), then I added it to everything else with the rest of the milk. I thought these tasty healthy and good, hubby thought it needed a little sweetness though. Served with pure maple syrup & a dollop of Earth Balance. Thanks for sharing!
     
  3. These were delicious! I made them with baby food squash, skim milk, and egg beaters. They aren't traditional pancakes, but as a fan of odd pancakes I loved them. The banana adds a nice flavor especially paired with sugar free syrup. Thanks!

I am a mother of 2 young kids, one of which is picky. I came to the 'Zaar looking for new ways to prepare foods to try and get my family to eat healthier. I am proud to say both my picky one and my picky husband are eating a lot more vegtables and liking them! I love to collect cookbooks (don't we all) because I am always on the hunt for yummy new recipes. When I find a recipe I love, it goes on a 4x6 card and into my recipe box for future use. Since I like trying new things, the recipe has to be pretty special for me to hang on to it. I would say a good 90% of what I make I like, but just not enough for it to be THE recipe. I am generally not a picky eater, I like most things, but am just always on the look out for something different.
