  • Place garlic in pan and cover with water (about 1/2 c.) Bring to boil, reduce heat and simmer until garlic is tender - about 15 minute.
  • Reduce liquid to 2 T and increase heat for 3 minute
  • Pour through sieve into bowl and press garlic through, mashing, with wooden spoon.
  • Whisk in vinegar and add oil.
