We are not low carbers, but boy are these good. Recipe adapted from "500 Low-Carb Recipes". We adore these with Shrimp Jambalaya - see recipe. Unsure yield. You could add some garlic if you like.
- Simmer the cauliflower in water with the milk added in (it will keep the cauliflower from turning color). When very tender, drain well.
- With a hand masher, smash the cauliflower while mixing in the cream cheese, butter, and cheeses to the cauliflower. Salt and pepper to taste.
Great tasting! It tasted like mashed potatoes to us. I did add garlic powder to it and cut down on the cheeses. Made for My 3 Chefs 2012.
