Healthy Zucchini Bread

"A lower fat, lower sugar take on an old classic. The applesauce and orange juice add natural sweetness and flavor (particulary the oj for flavor). I plan to play around this and eventually use honey or nectar instead of sugar, as I don't like to use processed or alternate sweetners any more than I have to. Note: the loaves tend to be a bit short, I do that for portioning so if you prefer 1 big loaf go with one loaf pan or a square cake pan (9x9 or so works)."
