Healthy Zucchini Bread

"This bread is great for you! There is just a little sugar and no oil or butter. Not only that, it tastes great too. It is perfect if you are watching your weight, or for feeding toddlers and kids. You can use fresh or frozen zucchini. You can add in 1 cup dried fruit if you want too. Raisins are wonderful in it."

  • Beat the eggs until foamy.
  • Add in the applesauce, sugar, and vanilla. Mix well.
  • Stir in zucchini.
  • Combine flours, wheat germ, cinnamon, baking soda, and salt.
  • Combine both the dry mixture and the egg mixture.
  • Bake at 325 for 1 hour.

  2. This bread has the spongy, chewy texture one often finds with baked goods that use apple sauce instead of butter or oil. I'd try using half oil and half apple sauce if I were going to make this again.
     
  3. Perfect recipe! No need to change a thing. But I like to tinker, soooo...when I made them today, I added 1/2 cup walnuts and 3 bananas that were turning mushy. Lovely, lovely. Thanks for sharing!
     
  4. Forget the healthy as far as taste is concerned. I prepped some people before they ate this that there was no oil or butter in the bread, just in case they were expecting something more decadent. My three-year old calls this cake, and we just have to be careful not to give it to him each day so that he still thinks cake is special. Followed the recipe exactly and wouldn't change anything. Freezes well. Very very good. Won't look for another Z bread recipe. Could play with bananas and carrots here and I bet it would work fine.

I absolutely love my job. I get to stay home with my baby and observe her growth and changes everyday. I love playing with her and watching her practice old skills and learn new ones. My husband is a wonderful Christian man. He loves to work on the computer and in his vegetable garden - which means we get lots of fresh veggies. He enjoys trying new and different things. His all time favorite food is spaghetti with sausage. I love to cook. I started cooking when I got married 5 years ago. Then I could only make spaghetti. My husband encouraged me to try new things and now I love it! I also try to quilt, but that is a completely different matter.
