This bread was way too wet. In my efforts to bake it from a goo to a bread-like solid, I just wound up burning the tops and sides. Congrats to those who got it to work!
This bread has the spongy, chewy texture one often finds with baked goods that use apple sauce instead of butter or oil. I'd try using half oil and half apple sauce if I were going to make this again.
Perfect recipe! No need to change a thing. But I like to tinker, soooo...when I made them today, I added 1/2 cup walnuts and 3 bananas that were turning mushy. Lovely, lovely. Thanks for sharing!
Forget the healthy as far as taste is concerned. I prepped some people before they ate this that there was no oil or butter in the bread, just in case they were expecting something more decadent. My three-year old calls this cake, and we just have to be careful not to give it to him each day so that he still thinks cake is special. Followed the recipe exactly and wouldn't change anything. Freezes well. Very very good. Won't look for another Z bread recipe. Could play with bananas and carrots here and I bet it would work fine.
