This is a very similar tasting bread to Starbucks pumpkin loaf, but it is organic, low fat, cholesterol free, sugar free, and uses only whole wheat flour. This recipe will not be as good if non organic ingredients are used. High quality ingredients make for a high quality product.

  1. Pre-heat oven to 350.
  2. Measure xylitol and pulse in blender or food processor until powdered.
  3. Measure out earth balance and melt it.
  4. Mix together pumpkin puree, egg whites, yogurt, earth balance, evaporated milk, vanilla, xylitol, and stevia until well blended.
  5. Whisk or sift all remaining ingredients together in separate bowl.
  6. Add dry ingredients to wet ingredients and mix until just blended.
  7. Pour into greased and floured baking pans.
