ingredients
- 1 1⁄4 cups whole wheat flour
- 1 1⁄2 cups oats
- 1⁄3 cup date syrup (more to add sweetness)
- 2 teaspoons baking soda
- 2 teaspoons cinnamon (possibly even more)
- 1⁄4 teaspoon salt
- 3⁄4 cup water
- 1⁄4 cup soymilk
- 1⁄4 cup applesauce
- 1 egg
- 1⁄2 cup raisins
directions
- Preheat oven to 350. Line muffin tin with cupcake holders. Mix dry ingredients in a large bowl. Combine wet ingredients in a separate bowl. Add wet ingredients to the dry ingredients. Does not need to much mixing. Add raisins last. Pour into cupcake holders about 3/4 full. Bake for 10 to 15 minutes. Until they are moist but not wet. Take out of tin and cool on a cooling rack. It is much better room temperature.

Loved these heathy, high fiber muffins. I did use 1/2 cup of the date syrup and recipe #145505 in place of the cinnamon. Also mixed in a finely chopped apple in place of the apple sauce. The water was omitted and enough non-fat milk was mixed in for proper consistency. These would be excellent with some chopped nuts stirred in. Made for *PAC Spring 2009*
