  • Preheat oven to 400 degrees F.
  • Prepare pasta according to package directions but reduce cooking time by a few minutes; drain.
  • In a large skillet over medium high heat, heat oil and then add mushrooms; cover and cook, stirring for 5 minutes. Stir in tomatoes and artichokes. Cover and simmer another 3-5 minutes. Remove from heat.
  • In a large bowl combine remaining ingredients, except for the mozzarella.
  • Fill shells with mixture and divide among 8 individual baking dishes coated with Pam. Spoon sauce over each portion. Cover with foil and bake for 20-25 minutes.
  • Sprinkle with cheese and bake uncovered for 10 minutes or until bubbly.

  1. Ok I really bungled this recipe up because I did not read it right. I thought the mushrooms etc were supposed to be included in the stuffing! Oops! So my stuffing included the artichokes and mushrooms, to which I added a little minced garlic during the cook time. Because I mis-read the part about the sauce I thought I was supposed to add some marinara over top of it -- which I did. So I am really sorry about messing it up so much -- but I have to say the flavors were amazing! I loved the spinach and the mushrooms! DH declared this one of the top ten meals he has ever eaten. I have to agree -- do not miss out on this recipe it is delicious! Thanks for posting and again so sorry I messed it up so much! I will re-make and update my review after I make it correctly! :) Made for PRMR tag January 2010!

<p>I love cooking and trying different foods, but my favorite cookbooks are now Weight Watchers or low fat/low cal cookbooks as I tend to try and make low fat/low cal recipes. I lost over 90 pounds on Weight Watchers and have maintained for over a year now -- so my cooking/eating habits have changed drastically following my weight loss and to keep it off!</p>
