Healthy Spring Mix

"This is a one-serving salad I like to make for lunch after I come home from the gym. I add whatever vegetables I happen to have in my refrigerator at the time; it could be cucumbers, peppers, carrots, mushrooms, olives, tomatoes and even leftover grilled chicken. I try and slice and dice the vegetables as soon as I get home from the store and I am able to whip up this healthy meal in no time. Just add your favorite dressing."

  2. Outstanding mixture of flavors. You have sweet with tart and the added crunchiness of the walnuts. I didn't have white balsamic so used the dark. The only other change I made was to use feta cheese cuz that's what I had available. I too did not add any other dressing. Great salad! This will be made again. Thanks for posting.
     
  3. Just when I think I've made ever salad there is, you come along and add roasted red peppers. Loved this combination. Only suggestion is to toast the walnuts. I only used 1 tablespoon of blue cheese and it was great. My dressing was a mixture of olive oil, honey and balsamic vinegar, which is our favorite. thanks Lainey.
     
  4. Very good! I followed the recipe exactly, didn't have anything extra to add, but that didn't matter, I didn't feel like it was lacking anything. I thought that the oil and vinegar were plenty without additional dressing. Quick and easy! Thank you very much!
