- 2 large carrots, peeled and diced
- 1 medium onion, diced
- 2 stalk celery
- 236.59 ml sweet potato, peeled and diced
- 59.14 ml quinoa
- 236.59 ml spinach
- 411.06 g can natural low sodium chicken broth
- 411.06 g water
- 118.29 ml cooked ground beef
- 14.79 ml extra virgin olive oil
- 4.92 ml pepper
directions
- dice, chop veggies.
- sautee onions in olive oil until soft.
- add carrots, celery, sweet potato, and quinoa sautee for about 3 minutes, add broth and water.
- cook for 15 minutes, or until sweet potato is almost fork tender. Add cooked beef and spinach simmer 5 minutes. Turn off the burner and let sit for an additional 5 minutes.
- and salt and pepper to taste.
