- 1 cup organic flour
- 1⁄3 cup coconut oil, organic, non-gmo
- 1⁄2 teaspoon pink salt
- 1⁄4 - 1⁄2 cup water
- 1 cup half-and-half
- 1 -2 leaf organic kale, depending on size
- 6 eggs
- 1 potato, cooked
- 1 cup your choice sausage, cooked and diced, nitrate-free and organic
- 1 cup cheddar cheese, shredded
directions
- Preheat oven to 375 degrees.
- Crust: In a mixer or with your hands, work coconut oil into the flour and salt. When there are no longer large lumps of oil and the flour looks grainy, add enough water for the dough to stick together. Roll dough out into a circle between two sheets of parchment paper. Remove paper and arrange in pie pan.
- Filling: In a blender, liquefy kale with Half and Half. Add eggs and blend just until mixed thoroughly. Set aside.
- Dice potato and sausage and spread evenly in pie crust. Spread cheese over. Pour egg mixture over all.
- Place parchment paper over baking sheet, and put the pie on top of the paper. Bake in oven about 45 minutes. A knife inserted in the center of the pie will come out clean.
