This is so good! It takes just like a peanut butter cookie!! Fast, easy, healthy, no bake and can be made into balls or bars. This can be a fun activity to let the kids help with too!
- 1 cup peanuts
- 1 cup pitted dates
- 1⁄4 cup almond butter, crunchy and salted (I use Trader Joe's Almond Butter with Roasted Flaxseed)
- Put all ingredients into a blender or food processor and combine well.
- Shape into bite sized balls, or bars if you prefer.
- Can be eaten immediately, refrigerated or frozen depending on the desired texture.
For an absolute yummy and healthy snack experience, freeze these gems and eat them frozen. I loved them as-is, but may add mini chocolate chips next time. Thanks for the recipe!
