These muffins are more like biscuits instead. They are dry and heavier than a muffin. Not very sweet, either. I made 18 muffins instead of 12.

  1. Combine first 8 dry ingredients in large bowl.
  2. Mix well.
  3. Mix egg white, yogurt and melted butter together in small bowl until smooth.
  4. Add mixture to dry ingredients.
  5. Stir just until moistened.
  6. Fill greased muffin cups almost full.
  7. Bake at 375°F for 20 minutes, or until top springs back when lightly touched.
