Healthy Oatmeal Raisin Cookies

I gave this recipe a makeover when I was struggling with my blood sugar during pregnancy. These cookies are not very sweet, but are great for when you just need a little something.


Sooooooo yummy! My last batch is cooling right now and this is the best healthy cookie recipe yet! My 3 yr old took one bite and said, "Yummmmmmm!" I totally agree! I changed up the recipe just a bit: I added about 1/2 tsp cinnamon, omitted walnuts, added 1/8 cup wheat germ and 1/8 cup milled flax seed (for more healthy goodness), and I only had 1 cup of raisins. It would probably be really good with diced apples instead of the raisins too--I'm going to try that next time I make them. Thanks so much for posting! It was just what I was looking for!

  1. Mix applesauce, oil, and sugar. Add egg and vanilla, mix well.
  2. In a separate bowl, combine the flour, oats, salt, baking powder, and baking soda.
  3. Combine wet and dry ingredients. Stir in the raisins and nuts.
  4. Drop spoonfuls onto greased cookie sheets. Flatten each cookie. Bake at 375 degrees for 12 minutes or until lightly browned. Cool on a wire rack.
