- 2 tablespoons olive oil
- 1 cup celery, diced
- 1⁄2 cup onion, diced
- 2 garlic cloves, minced
- kosher salt
- 2 (14 ounce) cans diced tomatoes
- 1 (10 ounce) can diced tomatoes with green chilies
- basil
- oregano
- italian seasoning
directions
- Heat Oil in large 3 quart sauce pan. Add onions, celery, garlic. Saute until soft. Add tomatoes-Don't Drain off liquid. Add seasonings. Simmer for about 20 minutes, until begins to reduce. Using an immersion blender, blend to desired consistency. Serve.
