- 118.29 ml plain low-fat yogurt
- 29.58 ml fat-free mayonnaise
- 4.92 ml Dijon mustard
- 2 whole wheat English muffins, split
- 236.59 ml baby spinach leaves
- 14.79 ml vinegar
- 0.25 ml salt
- 4 eggs
- fresh ground black pepper
- fresh parsley (to garnish)
directions
- In a small pan, whisk together yogurt, mayonnaise and mustard. Stir gently on a low heat until warm.
- Place spinach in a microwavable dish, sprinkle with a little water and microwave for 20-30 seconds until gently wilted.
- Toast the muffins and place one half on four plates.

<p>We own a small ranch located in Napa, California. We used to be considered odd because we grew most of our food and lived frugally. Now we are viewed as trendy- go figure!</p>
