Healthy Easy Throw Together Mock Mini Pizzas

  • Preheat broiler on toaster oven or conventional oven.
  • Toast the 2 slices of bread in the toaster.
  • Fry Canadian bacon in pan with vegetable oil spray until lightly browned on each side.
  • Assemble the pizzas as follows: place 2 tablespoons each of the tomato sauce on each slice of bread. Divide the parmesan cheese evenly between both slices of bread. Top with fried Canadian bacon. Sprinkle with oregano, garlic powder, and onion powder if desired.
  • Broil for 2-3 minutes, or until the "pizzas" are done. For a more conventional look, cut the pizzas with a biscuit cutter or pancake ring to make a circular shape, or use a knife.

I am 22 years old, and recent grad from Marquette University. I have accomplished something that I have always wanted to do, which is become more healthy. My favorite cookbooks are the Joy of Cooking, since they tell you how to do everything in that book, and the American Heart Association Cookbook, 7th Edition since they tell you how to "health out" your favorite recipes. They also have some pretty awesome dishes in the book, for not a lot of calories. Just make sure to watch your portion size! :D Aspiration: I want to go to medical school and become a pediatrician. I want to be able to go to Africa and serve the people there, and to help out those in need here. Eventually I want to have my own private practice.
