I'm always in search of lower calorie recipes that taste just as good. This is a great recipe for an easy and quick snack.
- 1⁄2 cup cucumber, sliced
- 4 tablespoons hummus
- 16 reduced-fat crackers (I use Wheat Thins)
- 1⁄4 cup green olives, sliced
- Slice cucumber and green olives up.
- Spread a little bit of hummus on each cracker.
- Top with cucumber and green olives.
- Multiply ingredients for more people as an appetizer.
