I derived this recipe from another one posted on here that was derived from Paula Dean, I think. Lots of additions/subtractions to suit my taste and make it lower calorie. What is great about this recipe is you can add more veggies to make it even more hearty and not bulk up the calories -- You can add more tomatoes, olives, more beans for protein, carrots, more corn etcetera. Experiment and enjoy! *I try to utilize low sodium in all canned goods, its better for you. Lastly, it adds calories, but you can top with sour cream, green onions and shredded sharp cheddar...MMmmm

  1. Brown the ground meat in 2 T extra virgin olive oil.
  2. Add everything to the Crock Pot, heat on low for 6 hours, stirring occasionally.
  3. Enjoy!
