This is as healthy of a cookie as I have found and it still keeps a good texture and flavor!

Directions

  1. Mix first 7 ingredients.
  2. then add butter and sugar, mixing until fluffy.
  3. add eggs and vanilla, mix.
  4. then chips and nuts, stir until well mixed.
  5. Drop by tablespoon to ungreased baking sheet,~2 inches apart.
  6. Bake 350 degrees for~12 minutes.
  7. (Don't overcook, will be too crumbly).
  8. Note: I have adopted the use of whole wheat flour and olive oil to this recipe, should you choose not to-- use 1 1/2 cups all-purpose flour and 1 1/2 sticks margarine instead.

Love this recipe! I did change it up a little bit: I didn't use soy flour, but simply used half whole wheat and half all-purpose flour, increasing the amounts of each. I also added 1 tsp of cinnamon and used 3/4 cup of raisins instead of chocolate chips. Quite delicious! Thanks for sharing!

Amazing cookies! These got eaten up in no time, they were much loved. I made as written and used an organic olive oil, organic cane sugar and turbinado sugar. They weren't quite done at 12 minutes so I had to turn down the oven to about 335F-340F and leave them in for about another 5-7 minutes... not sure what happened there. Anyhow, they were still wonderful! Thanks for posting.

These were very good. I did make a few changes. Like the other reviewer, I was afraid of the taste of olive oil so I used canola. I used 1 whole egg and 2 egg yokes, added about 3/4 cups choc chips, and used walnuts. I used HALF the sugar, and they still came out great! I love all the healthy grains.
