  1. Spray a larg skillet with non-stick cooking spray.
  2. Place chopped potatoes in the skillet, and cook for a few minutes.
  3. Add the onions and cook until they're turning translucant.
  4. Add veggies and chicken, and cook until done.

I had to add a tsp or so of coconut oil to get the potatoes and onion not to burn, even though I was only on medium heat. Thats ok it only added 100 more cal's or so. Thanks for the recipe, not easy to find cheap healthy ones.

This was quite delicious...the only thing different that I had done was cook with about a cup of chicken broth to cook the potatoes and onion...Husband added some salsa...that's what he does to everything though, so I tried a bite and it was super..so if you like salsa add to the dish...Thank you for the recipe!!
