ingredients
- 1⁄2 cup oat bran
- 1⁄2 cup whole wheat flour
- 1⁄4 cup brown sugar
- 1 cup soymilk lite
- 1⁄4 cup egg white
- 1 tablespoon canola oil
- 2 teaspoons baking powder
- 2 teaspoons baking soda
- 1 banana
- 1 teaspoon vanilla extract
- 1⁄4 cup walnuts
directions
- Preheat oven to 430 degrees.
- Pour all ingredients into a bowl, and mix thouroughly (sometimes it helps to mash the banana in a seperate container before adding to bowl). Also, if you prefer your muffins sweeter, add around 5 or 6 artificial sweetner packets to the batter.
- Cook for around 10 minutes.

Super easy and super delicious! I added an extra banana (for a stronger banana flavor), 1 cup of whole wheat flour (for a thicker consistency), and a sugar substitute (for sweetness) in addition to the original recipe. I made these muffins strictly following the original recipe the first time, and they came out a little tasteless/dry. However, it depends on how you like your muffins! Either way, these muffins are a great and worth a try!!

BEST MUFFINS EVER!!!!!!!!! They are soooooo moist and flavorful. You would never guess that they are good for you. I used a 2 to 1 ratio of whole wheat flour to white to make them more tender but they would probably still be good the original way. I also added a little cinnamon. YUMMMY, thank you for the great recipe. :)
