  • Preheat oven to 400 degrees.
  • Coat a 12-cup large muffin pan with cooking spray.
  • In a large bowl whisk together flour, brown sugar, baking soda, baking powder, nutmeg, and salt until there are no lumps.
  • Stir in oats and cranberries.
  • Add oil, egg, milk, carrots and banana and stir until 2 minutes.
  • Distribute batter between the 12 muffin cups.
  • Bake until a toothpick inserted in center of a muffin comes out clean, 20 to 25 minutes.

  2. Ok, so I made these once and loved them and reviewed them and now I have made them again with some variations. I replaced the cranberries and carrots for 2 cups of shredded zuccini and some chopped chocolate bar- YUMMY!
