Healthy Alphabet Soup

"A delicious real alphabet soup which is much more nutritionally sound, as well as tastier, than the canned stuff. Recipe from "Stealth Health" Mar/99. In the ingredients, "Dried Italian herb seasoning is just regular dried Italian herb."

  • Combine first five ingredients; boil.
  • Add next four ingredients; boil; reduce heat, cover and simmer stirring occasionally for 1 1/2 hours until beans are tender.
  • Using a slotted spoon, remove most of the beans and transfer remaining liquid to a blender; process till smooth.
  • Return mixture and beans back to the pot; Stir in alphabet pasta.
  • Boil then reduce hear; cover and simmer 8 minutes until pasta is tender but firm.
  • Yield: 6 1 1/2 cup servings.

  1. I cheated a bit when making this and used a can of white beans instead of dried beans and therefore omitted the water. The pasta used was Organic Vegetable Alphabets. I sauteed the veggies before adding the broth and reduced the cooking time to about 30 minutes. The cayenne gives the soup a very nice bite wihout making it hot. DD had a 2nd bowl. That alone would make it a 5 star recipe for me. Thanks for posting. Made for ZWT4
     
  2. Nice and easy and tasty too. The kids liked it and I'm happy that I made a nutritious meal. I used tinned kidney beans as I didn't have white beans, so I used a little less water, and it worked out really well. I chopped the onion really fine, used minced garlic, and grated the carrot, so I didn't puree at all, making it simple. I'm tempted to add a little chopped bacon next time, then the husband will eat it too!
     
  3. Our family really enjoyed this soup. I was looking for something a bit different than our standard chicken noodle soup and this fit the bill. I had some extra tomato paste on hand so used a few tablespoons of that instead of the canned tomatoes and added extra stock. I also added some chopped green beans for extra veggies & colour.

  5. This was really good, and simple! I took out the beans completely from the recipe, but added browned ground turkey at the same time as adding the noodles. (Husband always has to have some sort of meat or poultry in his dinner!) My grocery store didn't have Alphabet pasta, so I used small shells and they worked great!

Hi! Thanks for visiting my page! I just graduated with a Bachelor of Science in Human Nutritional Sciences in May 2008 after 5 years of hard work. My hard work paid off as I was accepted to a post graduate dietetic internship which I am currently completing and will be done in June. I am pesco-vegetarian as I do not want animals to suffer for my consumption. I also love to be active in individual sports and train year round for triathlon. I am both an active racer and volunteer. The distance I prefer most is the Sprint distance - 750m swim, 20km bike, 5km run. This upcoming race season marks my 16th year of participating in triathlon. I love it just as much, if not more, than I did 16 years ago!! I also have a newfound love for Iyengar yoga. I have a profound love for animals and the pretty little kitty you see as my icon is my 16 1/2 year old cat Snuggles. Sadly, Snug passed away in March 2006, and is dearly, dearly missed.
