- 1 1⁄2 cups sugar
- 1⁄2 cup butter, softened (or margarine)
- 1 teaspoon vanilla extract
- 2 eggs (or 1/2 cup fat-free egg product)
- 2 1⁄2 cups flour
- 1 teaspoon cream of tartar
- 1⁄2 teaspoon baking soda
- 1⁄4 teaspoon salt
- 1 cup cinnamon baking chips (cinnamon-flavored baking chips)
- 1 cup pecans, chopped
- 1⁄4 cup sugar
- 2 teaspoons cinnamon, ground
directions
- Heat oven to 375°F (If using dark or non-stick pan, heat oven to 350 F.).
- In a large bowl, beat 1 1/2 cups sugar, butter, vanilla and egg with electric mixer on medium speed (or mix with a spoon) until creamy. Stir in flour, cream of tartar, baking soda and salt. Stir in cinnamon chips and pecans.
- In a small bowl, mix 1/4 cup sugar and 2 teaspoons cinnamon.
- Shape dough by tablespoonfuls into 1-inch balls. Roll balls in cinnamon-sugar. On ungreased cookie sheet, place balls 1 inch apart.
- Bake 7 to 10 minutes or until set and light brown.
- Immediately remove from cookie sheet to wire rack.

I read a lot about and hold my own personal skepticism regarding the affects of additives such as preservatives, hormones, artificial colorings, artificial sweeteners, caffeine, allergens, etc. With the increasing number of children and adults with food allergies, I am suspicious that the last century of our nation's food industry improvements have contributed. I'm doing the best I can to protect my family from the risks, but it is difficult to avoid every additive. I have friends and family with food allergies and know how difficult it is to cope with food restrictions. I enjoy the challenge of cooking for those with food allergies but can't imagine making it an every-day affair.</p>
