I love muffins and the Fall! Nothing says Fall like pumpkin muffins. My family is trying to eat a little healthier so I'm beginning to learn to use ingredients like wheat flour, oats, and apple sauce. This came from experimenting with a few recipes .

  1. Blend pumpkin, water, eggs, butter and applesauce.
  2. Mix remaining ingredients together .
  3. Add dry ingredients to pumpkin mixture until just mixed. (Do not over mix or use handed mixer. This will produce dry muffins.).
  4. Fill greased muffin tins.
  5. Bake at 350 for 25-30 minutes or until toothpick comes out clean.

This recipe made nice and moist muffins but hardly tasted like pumpkin, at least double the spices!
