    I love muffins and the Fall! Nothing says Fall like pumpkin muffins. My family is trying to eat a little healthier so I'm beginning to learn to use ingredients like wheat flour, oats, and apple sauce. This came from experimenting with a few recipes .

    Ingredients:

    Serves: 24

    Yield:

    Muffins

    Units: US | Metric

    Directions:

    1. 1
      Blend pumpkin, water, eggs, butter and applesauce.
    2. 2
      Mix remaining ingredients together .
    3. 3
      Add dry ingredients to pumpkin mixture until just mixed. (Do not over mix or use handed mixer. This will produce dry muffins.).
    4. 4
      Fill greased muffin tins.
    5. 5
      Bake at 350 for 25-30 minutes or until toothpick comes out clean.

      This recipe made nice and moist muffins but hardly tasted like pumpkin, at least double the spices!
