This recipe is from the Jan/Feb. 2008 issue of Health Magazine.
- 0.5 (7 1/16 ounce) can tuna
- 1⁄2 cup tomatoes, diced
- 1⁄2 tablespoon olive oil
- balsamic vinegar, to taste
- 1 cup Baby Spinach
- Empty 1/2 can of tuna into a small bowl and combine with the remaining ingredients.
- Place mixture on a bed of baby spinach.
