Hawaiian Turkey Burgers

ingredients
- 1 (8 ounce) can sliced pineapple
- 1⁄2 cup dry breadcrumbs
- 1⁄2 cup sliced green onion
- 1⁄2 cup chopped sweet red pepper
- 1 tablespoon reduced sodium soy sauce
- 1⁄4 teaspoon salt
- 1 lb ground turkey breast
- 1⁄4 cup teriyaki sauce
directions
- Drain the pineapple, reserving 1/4 cup of the juice and set the pineapple aside.
- In a bowl, combine the bread crumbs, onions, red pepper, soy sauce, salt, and pineapple juice.
- Crumble the turkey over the mixture and mix well, but do not overmix.
- Grill, covered, over medium heat for 3 minutes on each side.
- Brush with teriyaki sauce.
- Grill 4-6 minutes longer on each side or until meat is no longer pink.
- Grill pineapple slices for 2 minutes on each side, basting with teriyaki sauce.
- Serve on buns and top each burger with a pineapple slice.

These came out better than I expected... not dry, and good taste. I made only made one change: to add an egg into the mix because my first rolled burger didn't hold together as well as I wanted it to. Our breadcrumbs are very fine, maybe I should have added more instead of the egg. Never mind, the result is what counts! These are yummy. DH isn't a fan of chicken or turkey much but this would go down ok every now and again with him. For just me I could make it more often. Please see my rating system, a lovely 4 stars ! Thanks :)

We're usually not turkey burger fans but I bought some on a whim and with the heat knew I woudn't be making spaghetti with it. I found this searching for burger recipes and decided to try it. We were pleasantly surprised to find that it has FLAVOR. I used green pepper instead of red but otherwise did everything as stated. They were wonderful and the pineapple was a nice topping.
